Broccoli is definitely a staple veggie in our household, but this week I decided to go out on a limb and get broccolini. Crazy, I know. To my surprise, I think I might like broccolini better! The original recipe was from the Barefoot Contessa, but I switched it up a bit by using soy sauce instead of balsamic.
1 bunch of broccolini
1/4 cup olive oil
1 Tbs soy
1 squeeze dijon mustard
1 clove garlic minced
Salt and Pepper
- Blanch the broccolini in boiling water for about 2 minutes. I like blanching vegetables before adding flavor because it really helps them keep their nice color.
- Drain and place in ice water to keep them from cooking. Sometimes I skip the ice water bath, and just take them out a few seconds earlier
- Whisk the remaining ingredients and drizzle over the broccolini.
The lemon and soy together are fabulous! Such an easy and fast way to add Vitamin C to your meal.
